Non-bake day related sales

I would like to sell regular items not related to a specific day on the calendar, such as my sourdough e-book or dehydrated starter. Since SB app is already a place where my customers buy my products, it would be great to expand it further by adding a regular stock.
For e-book this would be an automated sales when customer adds their email address they automatically receive email with the PDF attachment of the e-book upon checkout.
For the starter kit, I would require a shipping address to allow customer track order ETA.
Would this be something possible to build on this platform?

This feature would be helpful, as I have some customers who don't use the website, and will just text me or tell me their order in person, and it would be nice to be able to create an order for them, even if there isn't a current bake day, so that I can see their orders (and maybe use the sms messaging if they would want to sign up), and track it with the rest.

I always upvote when i see posts like this. They did make an update That people Can request items any time. Which Is a huge step in the right direction. The bake day model is so restrictive.
